8ozs (225g, generous cup) barley grain (pot is better than pearl!)
1 medium onion, chopped
2 pints (1 litre, generous 4 cups) spring or filtered water
2 tablespoons low salt bouillon power
Bring to the boil, lower heat, cover and simmer gently for 40 minutes.
8ozs (225g, 4 cups) fresh watercress, finely chopped
Juice of 1 lemon (optional)
Pinch ground black pepper
Add to the pan, return to the boil for 2 minutes and serve hot.
If you like creamed soups, allow to cool slightly
and whizz in a goblet blender or with a hand blender.
